Mango kulfi | Mango ice cream

Anything with mango flavour in it does wonders, imagine the all time favourite kulfi with mango flavour in it!! It is going to taste even better when it's homemade, trust me!!

Follow this simple recipe and few tips to ensure no ice chunks in homemade kulfi!
Servings - 8 kulfis

Ingredients

Milk - ¾ litre
Sugar - ½ cup
Saffron strands - 6 to 8
Rose water / essence - 1 tsp
Mango puree - ½ cup
Condensed milk - 2 tsp (optional)
Dry fruits - mixed, sliced
Cardamom powder - ½ tsp

Steps to prepare

1. Soak saffron strands in 2 tsps of milk and keep aside.
2. Boil milk until it reduces to almost half. Keep stirring constantly to mix the cream formed, back to milk.
3. After the milk thickens and reduces to half, add 2 tsp of condensed milk, which is completely optional.
4. Add sugar according to taste and keep boiling until it melts completely.
5. Add mango puree and mix well. Then add rose water or essence and saffron milk.
6. Turn off flame and add cardamom powder and dry fruits. Let the milk cool completely.
7. After it comes to room temperature, pour it into kulfi moulds or any airtight container, cover either of them using an aluminium foil tightly. 
8. Freeze it for 6 to 8 hours.
9. After taking out from fridge, ensure to let it for 2 to 3 minutes before removing from mould or container.
10. Serve it immediately and enjoy the desi version of kulfi.

Tips -

1. If adding condensed milk, add less sugar as condensed milk is already loaded with sugar.
2. If not moulds, use a glass, plastic or ceramic container. Cover it with aluminum foil or cling wrap tightly.
3. Don't keep checking if ice cream has set by opening the freezer door again and again.
