Set Dosa / Khali Dosa

Set dosa is called so as it comes in a set of 2 or 3 in restaurants. It is made soft and fluffy, sometimes stuffed with grated carrot and coriander leaves on the top also. It tastes great when you want to have something light.
Servings - Would suffice family of 4 for 2 times

Ingredients

Par boiled rice - 2 cups (if not available, use normal rice)
Rice - 2 cups
Poha / Rice flakes - 1 cup
Methi - 2 tsp
Urad dal - ½ cup
Maida - ½ cup
Rice flour - ½ cup
Salt to taste
Ghee or oil for dosa making

Steps to prepare

1. Wash all ingredients 2 to 3 times, except rice flour and maida.
2. Soak them for 6 to 8 hours or overnight.
3. After 8hrs, grind in a wet grinder or mixer until smooth. Add water little by little.
4. In the end, add the flours and salt. It can be added after everything is ground or 1 hour before preparing dosa. 
5. Let dosa ferment for 8 hours or overnight.
6. Heat a dosa pan and pour batter in a spatula and spread it evenly on the pan. Avoid spreading it more as set dosa is supposed to be thick and soft.
7. Add ghee or oil as desired over the dosa. 
8. Cook the dosa on both sides until light brown and set dosa is ready to serve with chutney.

Tips

1. Don't worry about par boiled rice, substitute it with normal rice or dosa rice if not available.
2. Keep the batter a bit runny and avoid spreading it on pan.
