Bombay sandwich / Veg sandwich

Sandwich is an integral part of everyone's life today. Be it as a quick breakfast or an evening snack, it is filling and can be made healthy.
Bombay sandwich has another layer of stuffing which makes it a complete meal. What we have here is my healthy version stuffing as many vegetables as possible.

Servings - 10 sandwiches
Preparation time - 15 mins
Cooking time - 15 mins

Ingredients

Bread slices - 1 loaf
Butter/ ghee for spreading
Potatoes - 3 medium, boiled and mashed
Onion - 1
Carrots - 2 grated
Cucumber - 1, sliced
Tomatoes - 2, sliced
Onion - 1, sliced
Capsicum - ½, sliced
Chat masala
Green chutney - ½ cup
Oil - 1 tsp
Turmeric - ½ tsp
Chili powder - ½ tsp
Salt to taste

Steps to prepare

2. For stuffing - In a pan, heat oil and add onions, saute until transparent. Add salt, turmeric and chili powder, mix well and add mashed potatoes. Turn off flame and add grated carrots, mix well. Keep aside for cooling.

3. Apply butter on 2 slices of bread, then apply green chutney as per spice level on both slices of bread.

4. Take a spoonful of stuffing and spread it on one of the slices.

5. Place sliced vegetables as per preference and sprinkle chat masala.

6. Place the other slice of bread over it and apply butter on the upper part of the sandwich.

7. Preheat the sandwich maker before placing the sandwich. If not using a sandwich maker, preheat a tava and place it on tava. Cook well on both sides in low flame until brown and crispy.

8. Sandwiches are ready to serve with tomato ketchup.

Tips

1. Add or remove any vegetables as per your preference.
2. Butter can be replaced with ghee or can be totally skipped.
3. Green chutney is good to have, but optional.
