Kesar Badam Pista Cupcakes

A cupcake visits India and eats our sweets and transforms into "Kesar Badam Pista Cupcakes". Never heard of it? Then try this recipe!!

The idea struck when lot of badam mix was left at home unused and had to be consumed before expiry. I'm sure this recipe makes way for your un-consumed badam mix as well. Don't forget to leave your feedback.
Ingredients

For batter -
Maida - ½ cup
Badam mix - 3 tbsp
Pista - chopped
Kesar milk - 1 tbsp 
Vanilla essence - ½ tsp
Baking powder - ½tsp
Baking soda - ¼ tsp
Vinegar - 2 tsp
Salt - 1 pinch
Milk as reqd

For frosting -
Butter - ¼ cup
Green food colour
Badam mix as reqd

Steps to prepare
For cupcake -
1. In a clean bowl, add butter, vinegar, Vanilla essence, kesar milk and whisk it for 2mins.
2. Mix all dry ingredients in a separate bowl and add it little by little to butter mixture.
3. Add milk if batter is dry. Batter should neither be runny nor tight. It should be scoopable.
4. Preheat oven at 170°C.
5. Using ice cream scoop or a spoon, transfer the batter to a cupcake mould or liner. Fill only ½ of the mould so that there's enough space for the cupcake to rise.
6. Bake the cupcakes at 170°C for about 15 minutes. Check in between for doneness by inserting a toothpick or knife which should come clean.
7. Cupcakes are ready and can be decorated with cream or can be eaten directly.

For frosting -
1. In a bowl, put ¼ cup of butter and whisk until it's smooth and fluffy.
2. Add 1 tbsp of badam mix, pista, green color and mix it lightly.
3. Frosting is ready and can be used in any shape or form.

Tips

1. Wheat flour can be used instead of maida.
2. Sugar can be added if there's no sugar in badam mix or if needed.
3. Food colour and essence can be skipped altogether.
