Sev Puri / Chat/ Street Food / Papdi chat

No introduction needed for any chat in India. It is favourite of people with all ages and kinds. Sev puri is a little dryer version, where there is no ragda or curd. It'll be 2 or 3 chutneys, I've used 2 of them here. Sweet chutney accounts to making the puris a bit soft. 
Recipe links given for green chutney and sweet chutney below. There are 2 ways in which sweet chutney is made in that recipe, dates chutney is the most preferable for this recipe.

How to make puris?
Ingredients

Wheat flour - 1 Bowl
Roasted cumin powder - 2 tsp
Oil - for dough and to fry
Salt to taste

Steps to prepare

1. In a big bowl, take wheat flour, add cumin powder and salt, mix well.
2. Add oil little by little and check rubbing dough against your palms. When it reaches sandy texture, it has sufficient oil. This is an important step, less oil will make puri soft and not crispy, more oil will absorb lot of oil after frying.
3. Then make a soft dough by adding water little by little.
4. Make small balls of dough and press then using a presser. OR make big balls and roll out using a roller, then using a small bowl or cookie cutter, cut them in rounds and keep aside.
5. The puris need to be pricked with fork or knife before fryinh in oil. Fry in medium hot oil, puris are ready.

Ingredients

Puris / Papdi
Sev - thin or nylon
Green chutney Recipe link
Sweet chutney Recipe link
Cut onions
Cut tomatoes
Boiled and mashed potatoes
Red chili powder
Cumin powder
Chat masala
Salt to taste

1. Firstly add red chilli powder, cumin powder, salt and chat masala to mashed potatoes, mix well and keep aside.
2. Assemble puris in a plate, place potato stuffing on every puri.
3. Add onions, tomatoes, chutneys in any desired order and amount according to taste.
4. Sprinkle handful of sev and serve immediately.

Tips

1. Dates chutney is preferred for this recipe and don't keep it very runny.
2. Garlic chutney also can be used along with green chutney.
