Sweet chutney / Meetha chutney

Here is a deal, I will show you not just one but two ways of making sweet chutney. Though both can be used interchangeably, some suit particular dishes very well. Let's see how to prepare both chutneys which can be stored in refrigerator for up to few months.
Tamarind jaggery chutney is well suited to accompany kachori, samosa, etc. while dates chutney is more suitable for sev puri, masala puri etc.

Tamarind jaggery chutney

Ingredients -
Tamarind - lemon sized
Jaggery - ½ cup
Salt - ¼ tsp
Chilli powder - ½ tsp
Roasted cumin powder - ½ tsp

Steps to prepare-
1. Soak tamarind for at least half an hour. Squeeze out the pulp of tamarind and filter the liquid.
2. Start boiling this tamarind juice, add jaggery and let it melt and boil for 5 minutes.
3. Add chili powder, roasted cumin powder and salt, mix and let it continue to boil for another 5 minutes.
4. After the liquid thickens slightly, turn off the flame and let it cool completely.
5. Use as required and store the rest in refrigerator for 2 to 3 months easily.

Dates chutney

Ingredients-
Dates - 250 gms
Tamarind - lemon sized
Jaggery - ¼ cup

Steps to prepare -
1. Halve the dates and deseed them. Wash them and add to cooker.
2. Add jaggery and tamarind as well, pour enough water to soak all the ingredients and give 3 to 4 whistles.
3. After it cools down, grind it finely in a mixer.
4. Filter out the mixture to remove any fiber or seeds that come by mistake.
5. Add water as required and use. Again, this country can be stored in fridge for up to 6 months, when stored well.

Tips -

1. Adjust water in both chutneys as per requirement.
2. Filtering dates chutney is personal choice.
3. Store the chutneys in airtight container to increase its shelf life.
