Butterscotch Ice Cream

Did you know basic ice cream can be made with just 2 ingredients?!! You can add any flavour that you like to it to make it your favourite ice cream. Here it is butterscotch, why add artificial flavour. Let us learn to make our own butterscotch chips.

Ingredients

Fresh cream (up to 30% fat) - 1 bowl
Condensed milk - 2 tbsp
Sugar - ¼ bowl
Butter - 2 tsp
Cashews - 8 to 10

Steps to prepare

For butterscotch chips

1. In a pan, heat sugar, add butter and mix.
2. Let the sugar melt, don't stir the mixture too many times. When the sugar completely melts, add few drops of melted sugar in a bowl of water, it should break easily and be crispy.
3. Now, add cashew pieces to it and mix.
4. Pour it on a butter paper or ghee smeared plate. Let it cool completely.
5. When it cools down, break it into larger pieces and powder it inside a mortar pestle.

For Ice Cream

1. In a large bowl, add cream to whisk. Create a setup of ice cubes by adding ice in a larger bowl and place the bowl to whisk in it.
2. Use a hand or electric whisk to mix the cream. Electric whisk takes about 10 minutes to reach soft peaks.
3. When soft peaks are reached, stop whisking. Add condensed milk and gently mix.
4. Now add the cooled chips to it and mix again.
5. Transfer it to an airtight container but also cover the container with cling wrap or aluminum foil.

Tips

1. 30% fat cream gives best results, if it's not available,  25% also does a good job.
2. As condensed milk and butterscotch chips contain sugar in it, we are avoiding any additional sugar. If required, powdered sugar or icing sugar can be added.
3. Choco chips can also be added instead of butterscotch.
