Carrot halwa / Gajar ka halwa

Carrot halwa is a simple yet delicious sweet which no one can say 'No' to. It is made with easily available ingredients and not lot of process is required to prepare it. Yet, there are some hacks which will give the restaurant like feel and will help not to turn it into sweet carrot sabji.
The recipe calls for milk, but you can use milk and water in combination if you would like to. Of course I would prefer only milk.

Servings - 4

Preparation time - 20 mins
Cooking time - 20 to 30 mins
Total time - upto 1hr

Ingredients

Carrots - 8 to 10
Sugar - 1 cup or as needed
Khova - ¼ cup ( homemade khova recipe link added below)
Ghee - 2 tbsp

Steps to prepare

1. Grate 8 to 10 carrots using a grater and add it to a wok.
2. Add milk or milk + water as preferred. Add slowly until it cooks well.
3. When carrots have become soft and cooked well, add sugar according to taste.
4. Wait for sugar to melt and evaporate, once this is done, khova can be added.
5. Ensure khova mixes well with the halwa and finally add ghee and mix well.
6. Carrot halwa is ready to be served hot or cold.

Tips

1. Adding only milk gives very creamy taste.
2. If large grater is used to grate carrots, you can run it in mixer once on pulse mode.
3. Homemade instant and easy khova recipe link is here - http://homemade-chef.blogspot.com/2020/08/homemade-khova-khoya-mava.html
4. If you want to skip khova, cooking in milk will still give a creamy texture.
