Idly Fry / Dhokla Fry

We can never make exact amount of idly batter ever and generally we experience that it's left over most of the times. So here is a hack to use it like an evening snack efficiently. It's a simple recipe and kids will love it for sure. If kids don't like idly, even in that case you can use this way to feed them once in a while. 
Ingredients -

Idly batter - leftover
Turmeric powder - ¼ tsp
Chili powder - ½ tsp
Sugar - 2 tsp
Mustard seeds - 1 tsp
Sesame seeds - 1 tsp (optional)
Oil for tempering
Steamer 

Steps to prepare -

1. Take idly batter and add salt if not present already. 
2. Grease a plate using oil and pour the batter on to it. Sprinkle chilli powder on the batter.
3. Place the plate in steamer and steam for 10 to 15 mins.
4. Use a knife or fork to check in between if it is cooked.
5. After cooling it down a bit, cut into squares or any desired shape.
6. Once the cut squares completely cool down, heat oil in a separate pan.
7. When oil heats, add mustard seeds and sesame seeds, turmeric powder can be added optionally to get color. When they splutter, add the cut idly pieces.
8. Gently mix it so that oil spreads to all pieces evenly. Add sugar also as required.
9. Let it stay on a low flame for 5 mins, it will create an awesome crispy layer below. Do try to get that.
10. Turn off the stove and serve when it's hot.

Tips -

1. You can use pressure cooker instead of steamer by removing the weight of cooker.
2. If you want it to be more spicy, you can add finely cut green chilli to the batter.
