Kulcha / Butter Kulcha (without tandoor)

Kulcha is mostly considered as a restaurant food at least in most parts of India. You will thank me today after looking at the recipe that it is so easy to make. We don't need to have a tandoor to prepare the best tandoori paratha or kulcha. It can be made very easily with a pan. I have made it on an iron pan also, I bet you don't even need a non-stick pan. The best part is, it is no a yeast method. And what better than home-made food.

Ingredients

Maida - 1 1/2 cups
Curd - 2 tbsp
Baking Powder/ Baking soda - 1 tsp
Sugar - 1 tsp
Oil/ Ghee - 1 tbsp
Water - 1/2 cup
Salt to taste
Butter
Coriander leaves - 1/2 cup
Sesame seeds (White/Black) - 2 tbsp

Steps for preparation

1. Take maida in a mixing bowl or plate and add oil, salt in it and mix well.
2. Add curd, sugar and baking powder and mix everything. 
3. Now add enough water to form a smooth dough, knead for sometime until it's soft and let it rest for at least 2-3 hrs.
4. After 2 hrs, it will puff well, then divide the dough in 4 parts and set it aside for another 1-2 hrs.
5. Then start rolling it using a rolling pin or you can even spread it with your hands. Be careful not to make it very thin.
6. Sprinkle coriander leaves and sesame seeds on the rolled dough and press it with fingers or roll once softly  so that they stick well.
7. On the empty side of rolled dough, brush some plain water well on all places. Now, put this side on a hot tava (prefarably with a handle) and gently press it. 
8. After about 30 seconds, turn the tava such that the upper side of kulcha faces the flame. The flame should reach kulcha from sideways. Rotate the handle so that all sides are cooked well. You can see that there are black or brown spots here and there, this ensures that kulcha is cooked well.
9. And most importantly, don't forget to brush lots of butter on every kulcha and serve it piping hot.

Tips:

1. Don't make dough very sticky, it will be difficult to roll or spread.
2. You can alternately use a cooker instead of tava. But I'm happy with tava :P If you use cooker, you can paste the rolled dough on the
inside wall of cooker and then invert the cooker itself on the flame.
