Veg Paratha

Being most popular breakfast in Northern part of India, I consider it to be healthier and tastier than aloo paratha. We can reduce usage of potatoes and substitute it with different vegetables making it a wholesome breakfast. Feel free to add any other vegetables as you like.

Ingredients

For dough - 

Wheat flour - 1.5 cups
Oil - 1 tsp
Salt to taste

For stuffing - 
Potatoes - 2 to 3
Beans - ~10 pieces
Carrot - 1
Green peas - ~15 
Paneer - 2 small cubes
Onion - 1
Capsicum - 0.5 small
Green chilli - 2
Salt to taste
Sugar - 1/4 tsp
Oil - 1 tsp
Jeera - 1 tsp
Turmeric powder - 1/2 tsp
Chilli powder - 1 tsp
Garam Masala - 1/4 tsp
Lemon juice - 1 tsp
Coriander leaves - 1 tsp

Steps for preparation

1. Add oil and salt to wheat flour and knead it into a soft dough using water. Let it rest for half an hour.
2. To make the stuffing, cut all the vegetables as small as possible.
3. Cook all vegetables except onion and capsicum in a cooker, oven or in an open vessel on stove.
4. Peel and mash the potatoes first, then mash the other cooked vegetables. Mash paneer also at this stage.
5. In a pan, add oil and jeera, after it heats add onion and capsicum. Sauté until onion sweats, then add finely chopped chilli.
6. Add turmeric powder, chilli powder, garam masala, salt and sugar. Mix well.
7. Then add the mashed vegetables, mix well, turn off the stove and add lemon juice. Sprinkle coriander leaves.
8. Now make balls of dough and let the balls of stuffing be double in size.
9. Roll out each dough to about 3" in diameter, place the stuffing in the centre and cover it with dough.
10. Use some dry flour and roll out the stuffed dough such that centre part still has the stuffing.
11. Fry it on a griddle using oil/ghee and serve it hot with curd or pickle.

Tips

1. You can add green chilli and masala as per your taste.
2. Broccoli, cauliflower, etc can be added by cutting them into very tiny pieces and cooking along with other vegetables.
